Debe's Favorite beverage recipe: The Shrub

“Shrub”, in drink terms, is combination of fruit, sugar, and vinegar. In the case of our Modena balsamic vinegars, no added sugar is needed because the vinegars are sugar-free and sweetened from the caramelization and balsamic aging process.

You can make a Simple Soda Shrub, a Simple Cocktail Shrub, or a Fancy Cocktail Shrub. Some recipe suggestions are shared below, and even our Fancy Cocktail Shrubs are simple and easy to prepare.

Simple Soda Shrub: Mix ½ to 1-ounce balsamic vinegar with 8 – 12 ounces of carbonated water; adjust to taste. Pour over ice. Popular flavors include: Pomegranate-Quince, Alfoos Mango, Coconut & Honey-Ginger. Can be single flavor or combined as desired.

Simple Cocktail Shrub: Mix 1-ounce balsamic vinegar to 2 or 3 ounces of your favorite liquor; adjust to taste. Options include: 1) add fresh-squeezed lemon or lime juice (just adding the balsamic makes your drink sweeter, adding in lemon or lime juice makes your drink tarter), 2) mix with tonic or seltzer water; 3) serve with a salted rim, or not, 4) serve on the rocks or neat. Popular mixes include:

·       Gin & Key Lime White Balsamic

·       Tequila & & Key Lime White Balsamic

·       Rum & Pomegranate-Quince White Balsamic

Fancy Cocktail Shrub Recipes:

1.   Mango Shrub Margaritas (makes 2)

4 oz tequila blanco or silver

3 oz Alfoos Mango White Balsamic

2 oz orange liqueur (such as Cointreau or Curacao)

1 oz Key Lime White Balsamic (sweet) or fresh-squeezed lime juice (tart)

Salt for rim: San Juan or Jacobsen’s

Combine the tequila, balsamics, orange liqueur, and juice (optional) in a cocktail shaker over ice and shake well. Optionally, rub a lime wedge along the rim of each glass and then dip the rim in San Juan Sea Salt, or Jacobsen’s Pink Himalaya salt. Fill the tumblers with ice cubes and strain the margaritas into each glass.
